Whole Grain Pancakes--almost vegan, fat-free

Recipe:

Soak in Apple Juice (2 or 3 oz) for 5 min:
1 Tablespoon Flaxseed Meal
2 Tablespoon Oatmeal
1 Tablespoon coarse Ground Cornmeal
1 Tablespoon Wheat Germ

Combine in separate bowl:
1/2 cup whole heat flour
3 Tbsp. rice flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
3 Tbsp. brown sugar
1/4 tsp salt
1 Tbsp. walnuts chopped fine (this has some fat, so could be omitted)
2 Tbsp. dry Ener-G-egg replacer

Fold in:
1 Tbsp. honey (this is the non-vegan item--could be replaced with maple syrup)
3/4 cup light soy milk
The whole grains that have been soaking.

Makes about 4 medium pancakes.  I serve with a light dusting of powdered sugar to add some class!
