Breakfast for a Holiday Weekend

Spinach Wrap with veggies for breakfast



It's Christmas Eve and we started the day with a nice green and red breakfast of kale, tomato, sweet potato, cauliflower, mushrooms, quinoa polenta, and vegan sausage on a bed of baba ganouche wrapped inside a warmed spinach tortilla.  Yum.

Last night we had a Christmas party for extended family and everyone ate what we eat:  vegetables, fruits, grains and beans.  We made meatballs (without meat) and pot-stickers, baba ganouche, spinach-artichoke dip, hummus (made without oil or tahini), chocolate cake made with applesauce instead of eggs and butter, and pumpkin cookies.  We also had fresh fruit and vegetables, pickles and olives and crackers and homemade tortilla chips and soup, brought by family.  It was a nice time spent with everyone.  
One of the games we try to play each year is for each person to bring one homemade gift to exchange.  
This year I made a nuts and bolts organizer:

My daughter made a wooden box with constellations burned into the top.  My husband painted a Dr. Seuss cartoon on a large canvass.  I find that being creative and the giving of oneself is the best part of Christmas, don't you?
