There is a new cookbook that contains recipes very friendly to a plant-based, no added fat diet. "The Happy Herbivore" by Lindsay S. Nixon. I have purchased many cookbooks that have plant based recipes, only to find oil listed in the ingredients of almost all the recipes. This book has "Over 175 Delicious Fat-Free and Low-Fat Vegan Recipes".
Hallalujah! The first recipe I made was for Tofu Ricotta Cheese and it is so good that it is now a permanent part of our new lasagna recipe. Right now, as I write this we have a test run of fat-free apple fritters in the oven. I used Lindsay's recipe for dough from her Cinnamon Buns recipe. Smells great.
If you are reading this than you are probably trying to eat smarter. You should buy the cookbook if you can find one--I pre-ordered mine and it sounds like they keep selling out. Lindsay, you have made the world a better place!
Another cookbook I acquired recently and like a lot is "Appetite For Reduction" by Isa Chandra Moskowitz, best selling author of Veganomicon. Her basic marinara sauce recipe is my go-to for spaghetti and lasagna; "Mom's Marinara", but I do omit the teaspoon of olive oil.
Included in the recipes from the book, "The Engine 2 Diet" by Rip Esselstyn is a recipe called, "New York Times Veggie Burgers" which is our favorite veggie burger. I leave out the onion powder because I can't eat onions, and found that by adding just a couple of tablespoons of vital wheat gluton the hold together really well.
