Spanish Rice

Spanish Rice

This is the best spanish rice I have ever had.  I omitted the part where you brown the rice in oil for heart-health!

3/4 cup brown rice
1 cup vegetable broth or vegetarian chicken   flavored broth
2 fresh tomatoes
1/4 cup cilantro
2 cloves garlic
water
Place all ingredients except rice into blender and combine.  Add enough additional water to make 2 1/2 cups of liquid.
Place liquid and rice in 2 quart saucepan and simmer until liquid is gone and rice is tender.
