You can't beat Beet Pancakes!

Beet Pancake, plant based breakfast.
Ingredients:
1 small beet, about 1/3 cup chopped
1 cup non-dairy, non-fat or low fat milk
2 tablespoons date sugar or 3 ground dates
1/2 cup whole grain flour
4 tablespoons oats
4 tablespoon flaxseed meal
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. egg-replacer powder
1/4 tsp. salt
dash each of nutmeg and cinnamon

Makes about 9 pancakes.
