Here is a nice whole grain pancake mix that is handy to keep on hand for that sudden urge to have a pancake and no time to measure a lot of ingredients, or for taking camping so all you have to add is a non-dairy milk.
Ingredients:
2 cups whole wheat pastry flour
2 cups oat flour
1 cup Bob's Whole Grain Hot Cereal
1/2 cup flaxseed meal
1/2 cup oatmeal
2 teaspoons cornmeal
4 teaspoons baking powder
4 teaspoons baking soda
4 teaspoons egg replacer powder
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
3/4 teaspoon salt
2 teaspoons chia seeds
Mix thoroughly and keep in airtight container. If you don't tend to make pancakes often, keep this mix in the freezer. It will make about 7 cups of pancake mix.
To use in pancakes:
Add equal parts non-dairy milk and pancake mix. I use 1\2 cup each mix and milk per person to make 2 medium size pancakes.
For fancier version, add 1 teaspoon vanilla and 1/4 teaspoon vinegar to each 1 cup of milk.
Optional: Add in 1/4 cup dried or fresh fruit per 1/2 cup of batter.
This recipe can also be used for waffles, just be sure to spray your waffle iron with Pam or like product after it heats up and before you add the batter.
